How much does Dried shiitake lose in storage over six months?

We are considering holding Dried shiitake for six months. What storage loss should we budget?

Budget 5-12% depending on the product and the room. For Dried shiitake watch breakage and moisture; the loss shows up as weight, grade or both, and it is the number that quietly eats the margin.
