Season: May-Sep flow. The spec we were offered is "moisture <18%, HMF limit".

What should the PO pin down so the bulk matches the sample?

Pin these: moisture <18%, HMF limit, the packing dimensions with a photo, and the inspection method. For Honey the usual failure is moisture and HMF — write it as a numbered clause, not as "export standard".
