What should a first Sesame seed PO pin down beyond price?

First order of Sesame seed. Beyond the unit price, what must the PO state?

Pin 99% purity, white or black, the packing dimensions with a photo, the inspection method and the document set (phytosanitary + CO). For Sesame seed write purity and moisture as a numbered clause — it is the item that causes claims.
