What is the harvest window for Dried bamboo shoot, and how does it affect quality?

We are planning a Dried bamboo shoot purchase from Fujian and Zhejiang and want to time it with the harvest.

The window is March-May. Inside the window you get the widest grade choice; outside it you are buying stored stock, and for Dried bamboo shoot the stored lot usually shows sulphur and moisture.
