What is the harvest window for Chinese yam, and how does it affect quality?

We are planning a Chinese yam purchase from Henan and want to time it with the harvest.

The window is October-December. Inside the window you get the widest grade choice; outside it you are buying stored stock, and for Chinese yam the stored lot usually shows breakage and moisture loss.
