What is the harvest window for Potato, and how does it affect quality?
We are planning a Potato purchase from Gansu and want to time it with the harvest.The window is September-October. Inside the window you get the widest grade choice; outside it you are buying stored stock, and for Potato the stored lot usually shows greening and sprouting.
