We are buying Dried Shiitake from Fujian / Hubei for a first order.Season: year-round drying. The spec we were offered is "whole/sliced, 12% moisture".
What should the PO pin down so the bulk matches the sample?
Pin these: whole/sliced, 12% moisture, the packing dimensions with a photo, and the inspection method. For Dried Shiitake the usual failure is breakage and moisture — write it as a numbered clause, not as "export standard".
