What should the PO pin down so the bulk matches the sample?
Pin these: air-dried or fresh, 200-350g pieces, the packing dimensions with a photo, and the inspection method. For Ginger the usual failure is surface moisture and mould — write it as a numbered clause, not as "export standard".
